Gefilte fish

The best part of Passover, is eating leftover gefilte fish the next morning for breakfast.

It's amazing that fish can last in definitely when it comes in a jar. I don't dare look at the ingredients!

Health care reform begins at home!

Here is an editorial I wrote that was published in the Champaign-Urbana News-Gazette on Friday March 26:

It finally passed. Like it or not, health care reform is here. Whether you’re surprised at the outcome of the vote to overhaul our current health care delivery system, or undecided whether the changes will be advantageous for your family, medically or financially, it’s time to look ahead.

Optimal health care really begins with you and your lifestyle choices and habits, not the government, insurance providers, doctors, pharmacies or hospitals. Start eating good foods and avoid bad ones. Maintain your proper weight. Become more active and incorporate exercise into every day. Go outdoors year round, whenever possible. Improve your methods for reducing stress. Sleep enough hours.

The impact of this new legislation will be inconsequential if you transform yourself into a healthier individual as you’ll require fewer encounters with the medical world. Take ownership for your own good health. Start today

This week marks an anniversary for our family. On March 25, 2008, I was able to locate a new branch of the family, that I previously did not know about, thanks to genealogy research. The archives at the library in Fort Wayne Indiana in Allen County, had the databases I needed to complete my search.

Running marathons

My son ran 30 miles in the Los Angeles Marathon this past weekend. I find that to be totally amazing.

I am not a runner and have never done any kind of marathon.

My grandma had been in the dance marathons in the 1920s.

As a long-time volunteer for the City of Champaign, I was invited to tonight's Gala event to celebrate the start of a year of celebrating the birthday of our town.

Grow Bean Sprouts in your Kitchen

Grow Bean Sprouts in your Kitchen

Those funny-looking little curly things at the salad bar and in Chinese food intrigue you. Mom says they are bean sprouts, tasty and healthy, too. She bought some at the supermarket last week; you snuck into the refrigerator and snacked on these sprouts. They were even delicious eaten by the handful! Curiously, you’ve never seen them growing in a garden.

Guess what! Growing your own sprouts is so easy. Unlike outdoor gardening, it is done in your kitchen in any kind of weather. It only takes a couple minutes each day, and within a few days you’ll have sprouts that you and your family can enjoy. The sprouts in salads are usually alfalfa spouts; the sprouts in Chinese food are mung bean sprouts. But there are many seeds and beans that can be used to make yummy, nutritious, edible sprouts to cook or eat raw such as lentils, adzuki beans, or wheat berries. Most of these can be purchased at the health food store or even the supermarket; Mom may already have some lentils in the kitchen.

WHAT YOU NEED:
1. Some beans or seeds for sprouting
2. An empty jar such as one from peanut butter
3. A strainer
And of course, clean hands

HOW TO GROW SPROUTS:
1. Place approximately ¼ inch of sprouts in the jar; it doesn’t need to be exact. Fill the jar with water from the sink. Leave it overnight.
2. The next day, rinse the beans using the strainer. Make sure the water is drained out of the jar.
3. Repeat this process for a few days, until the beans look like sprouts. In warmer weather, it will generally take fewer days for the sprouts to be ready.

That’s it! Nutritious, inexpensive, and earth-friendly sprouts you can grow to “wow” your family.

Census 2010

We all received the letter telling us to fill out our United States census report when it comes in the mail next week. Like we really needed the reminder!!! How much did THAT cost use, the taxpayers.

But indeed, census reports are useful in numerous ways.

Passionate about genealogy, I have found census reports of the past extremely helpful in piecing together our family tree. Someday, your folks may do the same.

Equestrian Therapy: using horses for rehabilitation

Here's a little article I wrote for children after my wonderful experience with equestrian therapy.

Horses Providing Therapy to help People who have Disabilities

Horses are beautiful animals, strong and sleek. You may have noticed them on a farm. Perhaps you’ve watched horses racing at the county fair or on television. Or possibly you have been horse back riding, either Western or English style, at summer camp or with your family. These two styles of riding use different equipment. Western involves a saddle and is the style of riding seen in the old cowboy movies. English riding originated in Europe.
If you look at old pictures from the days before cars, you can see horses pulling carts to transport people and goods, such as food. Horses are good work animals. But you may not know that horses can be specially trained to help people who have disabilities.
Equestrian therapy differs from horse back riding.
Equestrian or equine therapy, also called therapeutic riding, is a technique that is becoming more popular in helping people of all ages, especially children, who have physical and mental disabilities, to improve their daily functioning. The term equine means relating to horses, just as canine refers to dogs, feline means cats, and bovine refers to cows. Horse-assisted therapy is different from the horse back riding that you may be familiar with in that it does not involve speed or competition and a specially trained person, who is experienced both with horses and with people with disabilities, supervises, by walking alongside the horse and its rider as they trot.
Horses have many qualities that make them a natural for helping disabilities people. Their gait, or walk, is similar to that of a person even though they have two sets of legs. They also tend to be sensitive to people’s feelings.
Horse therapy helps improve many skills.
Whether a person has cerebral palsy which is a disability acquired at birth, or has some sort of injury or paralysis, getting on a horse can improve many skills, such as overall balance, body coordination, muscle tone, and flexibility. It also helps dispel fear and aids in gaining confidence. Grooming the horse has additional benefits.
Most breeds of horses can be trained to be used therapeutically.
Most horses that are calm and patient are trainable for to be used for therapy. Stallions which are adult male horses and competition or race horses tend to be more aggressive; they are not good therapy animals. Therapy horses must not kick, buck or make jerky movements, or bite. They must be good with children and also be able to carry out commands with verbal cues and not by touch.

The North American Riding for the Handicapped Association (NARHA) is a national organization that has much information about therapeutic riding. If you want to learn more about how horses are trained for therapy or where you can locate therapy horse farms or ranches, their website, www.narha.org, can be helpful. Or visit a therapeutic riding ranch near home or while on vacation. Perhaps someday, you may become a horse trainer for disabled people.

Yogurt is yummy to eat for dessert or as a snack. Though yogurt was first eaten in Turkey, a country on the other side of the world in Asia, today it is enjoyed nearly everywhere. People in India sometimes use it as a sauce on meals spiced with curry. What is your favorite way to eat yogurt?

Yogurt is good for you, too. It helps you have strong bones. The yogurt you get from the supermarket has many ingredients, including some which make the yogurt last longer, called preservatives. But really, yogurt only needs one ingredient, and that is milk from a cow or goat. The milk is heated so that it ferments, giving yogurt its tangy flavor.

Yogurt is surprisingly easy to make.

Milk magically turns into yogurt in only a few hours. First, it is heated to approximately 200 degrees, not quite boiling or bubbly, and then it is kept at that temperature for about ten minutes. This heat helps it become thick and it also kills unwanted bacteria. Then, the thickened milk is cooled to 120 degrees.

Already-made yogurt, referred to as yogurt starter, is added to the heated milk. For about four hours, the yogurt is kept at 100 – 130 degrees; 115 degrees works best. Finally, the yogurt is cooled and refrigerated in small containers.

Making yogurt at home is a fun family activity.

Get the family together in the kitchen and make your own yogurt. It is easy, doesn’t cost much money, and a good way to “go green” because you don’t need to use wasteful, throw-away containers. A yogurt making machine can be purchased at the store, but you can make delicious yogurt without that, using things that you probably already have in your own kitchen.

All you need is milk, a special food thermometer, sometimes called a candy thermometer. This costs about ten dollars at most groceries or superstores. You will also need a large pot such as one used for making soup. And you need a place to keep the yogurt warm for four hours such as a food drying machine or your regular kitchen over set on “warm”. You will also need some small containers for the finished ready-to-eat yogurt.

You can make your homemade yogurt fancy with fruit, nuts, granola, or spices such as cinnamon or vanilla. Serve it to your guests. They will feel like they are restaurant.

Last night I had the opportnity for the third year in a row to enjoy an evening performance of the Mark Morris Dance Company at Krannert.

What Ihadn't realize is that this group volunteers their time and resources to help people with Parkinson's Disease. Additionally, they give free movement classes for children.
